The bloom of the coffee is the part of the brewing process in which the gasses from the coffee are released as the water hits the grinds. This causes the bubbling that you see.
Not only does it look fancy, but if you don’t see the bloom when you make your coffee, the flavors of the beans won't be as prominent since this is an indicator that the degassing has already occurred and with that the flavor compounds within the beans have already deteriorated.
